When we post our favorite recipes and meal ideas, we always receive a robust (and grateful) response. So when Sarah chatted with The Planted Runner about plant-based nutrition for the AMR Podcast, we used the opportunity to pull together more recipes just for you.

We queried our BAMRbassadors to share the plant-based meals they make and enjoy. We asked that each recipe be tested and tasty, but also filling enough that even the carnivores in your family would be satiated at the end of the meal. So whether you avoid meat all the time or you’re interested in adding some more vegetarian or vegan dinners into your rotation, give these recipes a try.

General Tso’s Tofu

If you’ve never cooked with tofu before, this is your moment! The beauty of tofu, besides being packed with protein, is that it absorbs the flavor of the marinade you make—the longer you marinate it the better. Just a little bit of prep and you’ve got a delicious plant-based dinner that’s tastier (and healthier!) than Panda Express.

Shakshuka

Never heard of Shakshuka before? You likely have the ingredients in your kitchen, but if not they’re a breeze to gather. Best of all, this dish comes together fast—our favorite four-letter word.

“We LOVE eating Shakshuka, a North African dish that is full of yumminess. Not everyone in my house is an egg eater, so we often put fresh mozzarella balls in it. We serve it on couscous, but this also is good eaten plain or with a crusty bread or pita bread.” Rhianna S.

Roasted Chickpea Tacos

Make Taco Tuesday your favorite day of the week with this tempting recipe. The small but mighty chickpea is bursting with protein and fiber, and it’s nutty flavor is the perfect filling for your tacos. You can follow the reicpe as is, or add your own favorite fillings for versatility.

One Pan Farro with Tomatoes

If you think the perfect side dish doesn’t exist, think again. Hearty farro with bursts of cherry tomatoes and peppery olive oil is a tastebud delight. Double the reicpe for leftovers as the flavors get better the next day! You can easily convert this to a main dish by adding your protein of choice.

“This is my favorite vegetarian (can easily be made vegan by omitting the cheese) dish. It tastes delicious, comes together quickly, and makes great leftovers! I often serve it over a bed of arugula with just a little bit of olive oil and lemon juice.” Kate W.

Superfoods Soup

Soups are the superheros of the kitchen, and we’re always looking for new recipes to add to our rotation. Pulled from Run Fast, Cook Fast, Eat Slow, this veggie soup is kid-tested and approved! Served with a warm, crusty baguette, you can’t go wrong with this slurp-worthy meal.

“I make a huge batch for ski days and it is wonderfully warm and energizing for lunch on the slopes. My kids call it ‘superhero soup.’ My daughter even insisted on wearing a superhero cape to serve it at a church soup luncheon.” Colleen S.

Yellow Lentil Dal

A plant-based diet is beneficial for health reasons, but it’s also friendly on the budget. One of the most affordable staple ingredients is the lentil. Bursting with fiber, B vitamins, magnesium, and potassium, lentils come in a variety of vibrant colors. On nights when you need dinner in a flash, lentils cook in less than 30 minutes, which makes this dinner inexpensive and quick. 

“My mom grew up in India so I was raised on Indian food. Dal is one of my easy go-to meals that is vegetarian. It’s like a winter comfort food for me. It’s so tasty and perfect over Basmati rice!” Anna C.

Autumn Wild Rice Soup

Let this be the year you add wild rice to your kitchen pantry. Wild rice takes longer to cook, but the result is a nutrient-dense food that is filling and delicious. This soup recipe is hearty enough for your evening meal and just the right combination of flavors.

Vegan Lasagna with Basil Cashew Cheez

Don’t be intimidated by the lengthy ingredient list. This lasagna is worth the extra bit of time to create. The basil filling is scrumptious, and using marinara sauce from the store speeds up your prep time. Perfect for family dinners and potlucks, you’ll never miss the meat!
