Obviously there’s the classic spaghetti and meatballs, but sometimes it’s fun to think outside the box and experiment with creative twists, including meat-free options. Best of all, these recipes can be made ahead of time and in bulk, so when you’re short on time but still want a delicious and satisfying dinner all you have to do is pull a batch out of the freezer.

Curry Chicken Meatballs

“I grew up on Indian food because my mom was raised in India, and this recipe is great with the curry spices. Sometimes to make it even easier, I use pre-made frozen turkey meatballs as a substitute.” Anna Carlson

Chicken Tofu Tsukune

“I recently discovered this Asian spin on meatballs—eating them harkens memories of my recent family trip to Japan! The tofu adds a welcome lightness and moisture without altering the flavor. I serve them on jasmine rice with Persian cucumbers dressed in a little rice wine vinegar, all sprinkled with sesame seeds.” Sarah Bowen Shea

Swedish Meatballs

“My mother-in-law made the best Swedish meatballs, and when my family wants comfort food that recalls dinners around her kitchen table I cook a batch of these. This recipe is similar to her own but a bit easier to make; and while there’s nothing healthy about the sauce, you just can’t skip it.” Cathy Engstrom
